At the Graindorge cheese company, particular emphasis is placed on three key objectives: upholding traditional cheesemaking methods, ensuring flawless food hygiene and providing a warm welcome to visitors.
The technologies that have been adopted to make E.GRAINDORGE’s AOC (protected designation of origin) cheeses certainly meet the first two objectives, with the use of simple equipment and a return to traditional skills. Some of the machines that are vital to the production process have been designed so that they faithfully reproduce the master cheesemaker’s time-honoured gestures, while the equipment is adapted to the recipes responsible for our cheeses’ success since 1910. Changing it simply to keep up with new-fangled techniques is out of the question. Permanent quality control in the curing rooms ensures that the cheeses are correctly graded according to their weight, the colour of their rind, their suppleness and, of course, their flavour.
The third objective has inspired architects and exhibition designers to create a quite unique visitor experience in Normandy. From glazed galleries, visitors can see cheeses being made and watch the maturing process take place before their very eyes. The exhibition space tells the story of Normandy cheeses and there is an opportunity to sample AOC Pont L’Evêque, Livarot and Camembert cheeses, as well as E. GRAINDORGE’s other cheese specialities.
